Is this the best cider we've ever made? We think so! In 2022 we took 225l of cider and filled a white wine barrel; over the past 18 months we've topped it up first with cider, then with wine (Chardonnay and Pinot Blanc) and finally with an experimental mead. We then withdrew 1/2 of the barrel before keg-conditioning it and refilling the barrel with 2023 cider to create a solera. The result is a super-rich, textured, creamy cider with lovely baked apple notes and hints of vanilla and smoke from the barrels.
